Josephine Chu is the co-founder of Zenful Bites, a social enterprise that provides eco-catering and holistic food education programming in the DC metro area with the aim of fostering a sustainable and healthy food system. Zenful Bites has partnered with DC Central Kitchen and ECO City Farms to educate youth and adults about healthy eating.
She works with Common Good City Farm as the Program and Outreach Coordinator to manage the food distribution programs (CSA, Farm Stand, Small Enterprise) and the Seed-to-Table workshops on herbalism, beekeeping, gardening, and healthy cooking.
She previously worked with the Communications team in the Climate Change Division in the Office of Air and Radiation at EPA. She has a MA in Global Environmental Politics from American University and a BA in Political Science and Environmental Studies from Binghamton University (SUNY). She studied Mandarin in Beijing and Nanjing as a Boren Scholar and worked with the Wildlife Conversation Society in Guangzhou.
